The Baking & Pastry Arts Program Curriculum (BAPC) is a comprehensive, standards-aligned curriculum developed specifically for middle school, high school, Career and Technical Education (CTE), and homeschool programs. Rather than asking educators to piece together lessons from scattered online resources, BAPC provides a complete instructional system that guides students from foundational baking skills to advanced production techniques through a structured, multi-level learning experience.
Every lesson, assessment, production lab, and classroom resource has been intentionally developed to work together, giving educators everything they need to teach with confidence while creating consistent learning experiences for every student.
BAPC was developed to prepare students for success beyond the classroom. Curriculum development is informed by competencies reflected in respected baking, pastry, food-safety, and career-education frameworks
Retail Bakers of America (RBA) Certified Journey Baker framework
American Culinary Federation (ACF) Certified Fundamentals Pastry Cook framework
ServSafe® Food Handler requirements, reflected in Level I food safety instruction
Career and Technical Education (CTE) Best Practices
Students aren't simply following recipes. They're building the technical foundation, vocabulary, and professional competencies expected in today's baking and pastry industry.
BAPC is organized into progressive instructional levels that build knowledge and technical skills over time.
Students develop the essential knowledge and techniques required for success in baking and pastry. Topics include kitchen safety, equipment, baking science, measurement, quick breads, cookies, cakes, and yeast breads. No prior experience required.
Students expand upon foundational techniques through more advanced products, production methods, and industry applications while strengthening speed, consistency, and professional execution. Builds on Level 1.
Every instructional unit contains a complete collection of ready-to-use teaching resources, including:
Lesson Plans
Guided Student Notes
Three Instructional Slide Decks
Pretest Assessment
Post-Test Assessment
Production Day Handouts
Quiz with Answer Key
Review Games
Substitute Plans
Everything is designed to work together, providing educators with a consistent instructional experience from the first lesson through the final assessment.
BAPC is licensed annually by campus, with unlimited instructor and student access at the licensed campus.
